Erisa Rei Homegrown- Episode 6 (From Scratch)

This week’s episode, I’m showing how to make Artichoke Rice Salad.  This is the first dish I ever made for my husband when we were dating.  He loves it and asks me to make for him sometimes.

ARTICHOKE RICE SALAD (makes 5-6 servings)

1 box rice pilaf, (prepared according to box instructions and cooled)
2- 6 oz. jars of marinated artichokes (reserve 2 T. of marinade)
18 green olives (sliced)
2 oz. diced pimientos
1/2 c. mayonnaise
1 t. curry powder
1/4 t. cayenne
1/2 t. salt
1/4 t. black pepper

Cook rice pilaf according to box instructions and cool. Put rice into large mixing bowl.

To make curry mayo: Add curry powder, cayenne, 2 T. marinade, salt and pepper to mayonnaise.

Add olives, pimientos, drained artichokes, and curry mayo to rice pilaf. Mix.
